Apple Yorkshire Pudding (Clafouti)
For those who truly love Yorkshire Pudding, it is nice to know you can have it for dessert as well. Here is a wonderful recipe for Apple Yorkshire Pudding (also known as Clafouti).
1 cup flour (good old All Purpouse flour)
1/2 teaspoon salt
2 eggs
1 cup milk
1/2 cup cold water
Vegetable oil
2 large Granny Smith apples
3 Tablespoons sugar
Sift flour into a bowl, then add the salt, eggs, milk and water. Whisk together with a blender or wire wisk until smooth (you could probably use a blender as well).
Peel and core the apples, then slice them thin. Toss with sugar, then add to the batter.
Let batter stand for at least 30 minutes in the refrigerator.
When ready to prepare, preheat oven to 450 degrees. Place 2 tablespoons of oil or shortening into a 9-inch pie plate (deep dish if you have it) and place this in the oven to heat thoroughly (at least 5 minutes.. or just leave it in there until the oven has completely heated to 450).
Pour in batter and bake for 30 to 40 minutes until brown and puffed. Sprinkle with additional sugar.
