Toad in the Hole Recipe
Toad in the Hole is a wonderful variation on Yorkshire pudding. Basically, it is a standard Yorkshire Pudding recipe with sausages added. Note that you want high-quality, flavorful sausages, not necessarily spicy ones.
Toad-In-The-Hole:
- 1 and 1/2 cups of All Purpose flour, sifted
- 2 eggs
- 1 and 1/2 cup milk
- 1 tbsp oil (olive oil or vegetable oil)
- 1 lb of good-quality sausage (pork or turkey)
- salt & pepper
- Pre-heat oven to 425 degrees.
- Place sifted flour in a bowl with a little salt & pepper. Make a "well" at the bottom of the bowl (push all the flour around the sides so there is a clear spot at the bottom of the bowl.). Place eggs and milk into the well. Whisk well to mix until there are no lumps. Cover and let rest for approximately 30 minutes.
- While the batter is resting, place sausages in a roasting pan and place in the oven for 10 minutes to cook.
- Once finished, make sure there is some fat at the bottom of the roasting pan from the sausages. Pour the batter over the top of the sausages (it should cove the sausages about 3/4 of the way.).
- Place the pan back in the oven and cook for 20 to 25 mintues until the batter has risen and is golden brown.
- Serve immediately either by itself, or with onion-gravy.
