Here is a wonderful recipe for Apple Yorkshire Pudding (also known as Clafouti).

1 cup flour (good old All Purpouse flour)
1/2 teaspoon salt
2 eggs
1 cup milk
1/2 cup cold water
Vegetable oil
2 large Granny Smith apples
3 Tablespoons sugar

Sift flour into a bowl, then add the salt, eggs, milk and water. Whisk together with a blender or wire wisk until smooth (you could probably use a blender as well).

Peel and core the apples, then slice them thin. Toss with sugar, then add to the batter.

Let batter stand for at least 30 minutes in the refrigerator.

When ready to prepare, preheat oven to 450 degrees. Place 2 tablespoons of oil or shortening into a 9-inch pie plate (deep dish if you have it) and place this in the oven to heat thoroughly (at least 5 minutes.. or just leave it in there until the oven has completely heated to 450).

Pour in batter and bake for 30 to 40 minutes until brown and puffed. Sprinkle with additional sugar.

Enjoy!

Toad in the Hole Recipe

Toad in the Hole is a wonderful variation on Yorkshire pudding. Basically, it is a standard Yorkshire Pudding recipe with sausages added. Note that you want high-quality, flavorful sausages, not necessarily spicy ones.

Toad-In-The-Hole:

1 and 1/2 cups of All Purpose flour, sifted

2 eggs

1 and 1/2 cup milk

1 tbsp oil (olive oil or vegetable oil)

1 lb of good-quality sausage (pork or turkey)

salt & pepper

Pre-heat oven to 425 degrees.

Place sifted flour in a bowl with a little salt & pepper. Make a "well" at the bottom of the bowl (push all the flour around the sides so there is a clear spot at the bottom of the bowl.). Place eggs and milk into the well. Whisk well to mix until there are no lumps. Cover and let rest for approximately 30 minutes.

While the batter is resting, place sausages in a roasting pan and place in the oven for 10 minutes to cook.

Once finished, make sure there is some fat at the bottom of the roasting pan from the sausages. Pour the batter over the top of the sausages (it should cove the sausages about 3/4 of the way.).

Place the pan back in the oven and cook for 20 to 25 mintues until the batter has risen and is golden brown.

Serve immediately either by itself, or with onion-gravy.

Enjoy!

Yorkshire Pudding Recipes

Just think, something as wonderful as Yorkshire Pudding has only 4 ingredients. It is so easy to make.. yet tastes so good. (OK, I've been known to make a pan of Yorkshire Pudding as my dinner... my ONLY dinner).

Here are step-by-step instructions.
It makes a 9x9 pan.

* Please note, if you are using drippings from a roast or oil put them in the pan while it is preheating. If you are using butter, put it in the pan after it has heated.

DIRECTIONS:
1. Put glass 9x9 pan into oven and preheat to 425 (yes.. pan should be in there the whole time.)

2. While oven preheats, whisk together the following ingredients:

2 eggs, well scrambled

1 cup of milk (preferably whole milk.. but 2% will work)

1 cup of flour (regular old A.P.)

3. When oven is completely preheated, place butter in to melt then immediately add the combined ingredients.

4. Bake for 20 to 25 minutes. Yorkshire pudding should rise all around the edges over the pan and should start to brown. Resist the temptation to peek in the oven while it is cooking.. you'll only let the heat out. Check it at 20 minutes.

5. Let cool for 5 minutes, then cut into squares, slather with butter, and chow down!

Hope you enjoy this simple recipe as much as my family does. Remember.. while Yorkshire Pudding has traditionally been served with a Sunday roast... there is no reason why you can't enjoy with any meal (or by itself). The only thing missing is the beef drippings.. but I personally feel that using butter is *almost* just as good.

Enjoy!
